What is Beef Pares Mami?

“Pares” means “pair” in Filipino — it’s usually served as a trio of sweet soy-braised beef, garlic rice, and clear soup. This version combines it with Mami, a Filipino-Chinese noodle soup made with fresh egg noodles and a deeply savoury broth.

Together, they create the ultimate street style comfort food. Think rich beef flavour, garlicky depth, silky noodles, and that nostalgic hit of warmth.

Ingredients

For the beef:

  • 500g beef brisket or chuck, cubed

  • 1 onion, chopped

  • 4 cloves garlic, minced

  • 1 thumb-sized piece of ginger, sliced

  • ½ cup soy sauce

  • ¼ cup brown sugar

  • 1 tbsp fish sauce

  • 1 tsp cracked black pepper

  • 3 cups water

For the broth:

  • 3–4 cups beef stock or water (adjust to taste)

  • 2 star anise pods (optional but adds depth)

  • Salt, to taste

To serve:

  • 400g fresh egg noodles or ramen noodles

  • Fried garlic

  • Spring onions, sliced

  • Optional: blanched bok choy

  • Calamansi or lemon wedges

  • 6-minute soft-boiled eggs


Method

  1. Add to the slow cooker: Soy, Fish Sauce, Sugar, Salt, Pepper, Onion, garlic, star anise and ginger. 

  2. Brown the beef: Add beef pieces or whole brisket into a hot pan and sear lightly on all sides.

  3. Low and slow: Add the brisket (or beef pieces) into the liquid in the slow cooker. Ensure you cook low an slow for 5-6 hours. 

  4. Get Everything Ready To Plate Up: Remove the beef from the slow cooker and let rest. Add eggs to a pot of boiling water and cook for 6 minutes. 

  5. Cook noodles: While the eggs are cooking. Add the noodles to the mixture in the slow cooker and let cook while you prepare other ingredients. 

  6. Assemble bowls: Divide noodles into bowls, top with sliced beef, pour over broth, then finish with fried garlic, spring onions, and soft-boiled egg.



Tips & Variations

  • Make it spicier: Add fresh chili or a spoonful of chili oil to each bowl.

  • No noodles? Serve over garlic rice for the OG-style Pares experience.
